PROGRAM OVERVIEW
The Pathsaala Culinary Program offers a comprehensive and unique education that combines traditional Indigenous knowledge with Western culinary techniques. Students will gain hands-on experience from the ground up, starting with the fundamentals of gardening—including planting, cultivating, and harvesting—before advancing to essential kitchen skills such as knife work and food preparation.
The curriculum also covers advanced culinary practices, including butchery, international cuisine, and à la carte production, ensuring that students are well-prepared for all aspects of professional kitchen operations. Upon graduation, students will have the skills and knowledge necessary to jumpstart their careers in the culinary field.
In addition to culinary training, Pathways Coaches provide personalized guidance to help students transition into the workforce, whether it’s securing a position in a restaurant, working with established food businesses, or launching their own food enterprise within their community. The program equips graduates with the confidence and expertise to succeed in the ever-evolving culinary industry.

EARN RECOGNIZED CREDENTIALS
After completing two years of study, students will graduate with a Diploma in Culinary Arts. The program is designed with flexibility in mind, allowing students to enroll on a yearly basis and progress at their own pace. Whether they opt to complete just one year or the full two-year program, students will acquire the skills and knowledge required to thrive in the culinary industry.
LEARNING OUTCOMES
The Pathsaala Culinary Program is designed to provide students with a comprehensive set of skills and knowledge to excel in the culinary industry. Key learning outcomes include:
- Safety Principles and Practices: Students will apply safety standards in accordance with provincial and national guidelines, ensuring a safe working environment.
- Communication Skills: Students will develop effective written, verbal, and electronic communication skills, and will learn to work both independently and collaboratively in a fast-paced, commercial kitchen setting.
- Professionalism: Emphasis will be placed on maintaining cleanliness, sanitation, and proper use of kitchen tools and equipment to uphold a professional kitchen environment.
- Food, Nutrition, and Health: Students will gain an understanding of how food affects nutrition and health, and will be able to adapt menus to meet special dietary needs.
- Ingredient Selection and Food Preparation: Students will apply knowledge of ingredient selection, cooking methods, and principles to ensure proper production, storage, and service across all kitchen stations.
- Butchery and Fabrication: They will gain hands-on experience in the inspection, butchery, and fabrication of meat, game, poultry, fish, and shellfish, including techniques for portioning, cooking, and storing these ingredients in both a quantity and à la carte service environment.
- Wine and Spirits Knowledge: Students will learn about the use of wine and spirits in the kitchen, including their role in cooking and food pairing.
- Emerging Culinary Trends: Awareness of current culinary trends will be cultivated, including new techniques, sustainable practices, and ethical sourcing that align with industry developments.
- Business and Operational Skills: Students will understand the business factors that influence successful food service operations, such as cost control, budgeting, and recipe adaptation.
- Practical Applications: Students will develop problem-solving skills to address common challenges in culinary operations, such as managing time constraints, ingredient substitutions, and fulfilling customer requests. By the end of the program, graduates will have a well-rounded skill set that prepares them for a successful career in the culinary arts.
RED SEAL
Students who choose to stay for four years in the Pathsaala Culinary Program have the opportunity to test under Red Seal accredited chefs, positioning them to earn the prestigious Red Seal certification. The Red Seal is the national standard of excellence for trades in Canada and allows those who achieve it to work anywhere across the country without the need for additional testing or certification. It offers a competitive edge in the job market and provides greater flexibility in pursuing a culinary career.
In the two-year program, students will graduate with a Diploma in Culinary Arts, while those who continue for the full four years will gain valuable experience working towards their Red Seal.
After graduating, students who work with Elephant Thoughts or another suitable employer can register as an apprentice, receiving credit for the hours and exams completed during their time at Pathsaala. This allows them to continue working towards their Red Seal and eventually take the official Red Seal exam to complete their certification.
PREREQUISITES
We are dedicated to assisting all prospective candidates throughout the application process to assess whether Pathsaala is the right fit for them. Our Pathways coaches are available to support and guide students every step of the way.
TUITION
Annual tuition is $18,500 which includes; All learning materials, certifications (such as WHIMIS etc), training and uniform.
The Pathsaala Culinary Program is designed with students’ financial well-being in mind. Our tuition rates are carefully aligned with market standards and the earning potential of our graduates. We structure our fees to make education affordable, enabling students to enter the workforce quickly without accruing substantial debt. By offering competitive tuition, we aim to minimize the financial barriers often associated with career training, allowing students to focus on honing their skills and launching their culinary careers with greater financial freedom.
ACCOMMODATIONS + COSTS
The cost for accommodations is $750 per month for a duration of 8 months. These accommodations offer students a large, private room in a student house within walking distance of the campus.

The house features a large yard and outdoor spaces, providing plenty of room for relaxation and recreation. Students will also have 24/7 access to a shared kitchen for preparing their own meals.
The student house typically accommodates 4-6 students, fostering a supportive community. The cost also covers the cleaning of common spaces and ensures 24/7 supervision for added safety and support.
